Chili and Cornbread Waffle Dinner
So, I saw this idea on Pinterest and wanted to try it out.
I used my cornbread recipe (doubled it - the waffle maker uses a lot of cornbread batter) and put it in the waffle maker. I made this chili recipe and topped it with some cheese.
The verdict?
You guys, that is a lot of cornbread to eat! It's not like a waffle, cornbread is so dense and heavy. I totally didn't finish mine. I have a square waffle maker too, and gave the kids each a tiny square and that was a better serving size.
I probably won't make this again. I enjoy my cornbread plain with apple butter or honey. Or...
Back when we used to have left overs (before my kids started eating adult sized portions....), I would take left over chili, put it in a cast iron skillet, sprinkle cheese on top, and pour over my corn bread batter then bake! Now, that was super yummy!!!!! It was also better cornbread to chili ratio in a serving.
Yum!
Weird fact about me: I love to eat cornbread batter as much as cookie dough or biscuit dough! Yummy!!

Copy Cat Butterfinger Candy Bars
I'm not sure I would call this a Pinterest Fail, but it was pretty close.... I followed the recipe exactly, but some of my candy corn was really old, so I don't know if that mattered or not... I probably won't try again any time soon to find out either.
However, the taste was pretty close to copying a Butterfinger candy bar. To quote my eight year old, "It almost tastes like a Butterfinger, Mom. You did a pretty good job..."
Because my mixture didn't turn out quite right, it was really hard to cover in chocolate without getting little pieces of the inside stuck on the outside of the chocolate.
My two year old loved eating my rejects - I mean, they were all rejects, but he loved them.

Copy Cat Butterfinger Candy Bar Recipe:
Recipe from HERE
1 lb. candy corn
16oz jar peanut butter (I used Peter Pan Honey Roasted peanut butter)
16oz pkg. chocolate candy coating
Melt candy corn in microwave on high 1 minute. Stir and continue cooking in 15-second intervals til melted, stirring after each interval. Stir in peanut butter. Spread mixture in an 8x8 pan lined with parchment. Cool completely. Cut into squares. Dip in melted chocolate candy coating. Lay on waxed paper to set.

Pinterest Tuesday
I think I've decided to dedicate Tuesdays to Pinterest fails. I love pinterest, but this month it seems I've made a lot of just 'so so' recipes...
Baked Spaghetti: This was an okay recipe, but I'll never make it again. People we had for dinner liked it and had seconds, and the french fried onions on top were an interesting addition, but I would rather use my regular recipe which I just throw together...
Paradise Bakery Chocolate Chip Cookies: So... I've tried a few chocolate chip cookies on Pinterest because they look so awesome, but have yet to find a good recipe there. After the first batch of these baked, I thought maybe there could be an altitude difference in the recipe, so I reduced the temperature to 350, and that helped, but they still looked like this:
Parmesan Pull Aparts: These actually tasted good, but I think I used the Grand's biscuits, which were too big, I should have used the smaller ones because the tops were almost burnt, and when I flipped them out the bottom wasn't done cooking, so we had to throw it in the microwave for a few minutes... but I'll try these again, and maybe try them with my roll recipe.

Pinterest Fail
So, one night, I made THIS for dinner. I found it on Pinterest.
I knew it was going to take some time to make.... You stand these up in a springform pan:
And, I was so excited when I took the edge off my pan, and it looked like this:
However, when I cut into this pasta pie, everything came crashing down... This is what it looked like after I scraped it all into the first pan I could find.

I realized I skipped a step of sprinkling the noodles with parmesan cheese - maybe they helped glue the noodles together? I also didn't take the time to stuff each noodle with the meat sauce... as adorable as this looks, who has that kind of time in their life? Also, the recipe for the sauce was tomatoes and meat, so I had to doctor the sauce up a bit too. It actually tasted really yummy with my doctored sauce.
But, other than the doctored taste, this recipe was a fail.
