Chicken Appetizers


I tried a new appetizer recipe for the super bowl last Sunday, and we liked the results. I think I tore this recipe out of a Taste of Home magazine, but I tried to look it up, and can't find it. I adapted it a tiny bit anyway.

Chicken Bites

1/4 c. soy sauce
2 T. brown sugar
1 T. grated ginger root
1 tsp. grated orange zest
1/4 tsp. ground coriander
1/4 tsp. curry powder
1 tsp. minced garlic
not quite 2 lbs of chicken tenders

2 packages of bacon, cut in half cross ways (TIP: You won't use all of the other pack. Also, I ran out of regular bacon when making mine, and used some turkey bacon to finish. I actually liked the turkey bacon better. It was crispier, and it looks prettier, because regular bacon curls and splits, etc.)

Wooden Toothpicks (TIP: Next time I make these, I will either replace the toothpicks they are cooked with, because they get all charred, or I will take out the toothpicks they are cooked with and serve them without toothpicks and use appetizer tongs, or have a bowl of toothpicks next to the platter.)

Make Marinade:
Combine first six ingredients in small bowl. Cut chicken into bite sized pieces, and place in marinade in plastic bag, or shallow bowl. Mix well to coat chicken, and allow to sit in marinade for at least an hour, or overnight for more flavor.

After desired marinating time, wrap chicken pieces in the cut strips of bacon and secure with a toothpick.

Place chicken bites on wire rack on baking sheet. Using the rack prevents the food from soaking up the bacon grease.

Bake at 400 degrees for 25 minutes until chicken and bacon are cooked through. Serve warm.

  1. Sounds like it tastes great and is easy, with normal ingredients! What doesn't taste great with bacon around it!? But here's my question: Can you still taste the marinade flavors well, or do you mostly taste bacon?

  2. Oh, you can totally taste the marinade! It's actually pretty strong! The combination of ginger, garlic, and soy sauce totally outweigh the bacon.

  3. and maybe since you only use half a piece of baon, it's not as strong...
