Copy Cat Kentucky Fried Chicken Biscuits


We haven't eaten at KFC in a looong time, but when I came across this recipe on Pinterest, I thought it would be fun to try.  I mean, I think I make the best biscuits (I'm a very humble person), but I am always willing to try a new recipe!  (My biscuit recipe HERE or you can see where we turned my biscuit recipe into the copy cat flaky layered biscuits HERE)

When I saw the ingredients for the recipe though, I thought I wasn't going to make them because they called for shortening and I don't cook with that.  However, I remembered I bought some to make beignets recently!  Score!  This recipe also called for butter flavored Crisco, but I was not going to buy some of that just to make these biscuits, (Although I used to buy that to make my pie crusts, and it was very delicious...) and I just used regular butter instead in it's place.  

My husband actually made these because I was busy doing other things.  I supervised in a few areas, but that's it.  They do taste like KFC's biscuits for sure, not EXACTLY, but same texture, and very closely the same flavor.  I don't think my husband brushed them with as much butter after baking as KFC did, and honestly they probably use some kind of margarine, so that really was probably the only difference in taste.  They were good, but like any devoted husband would he said he liked our biscuits better.  (Just kidding, he'd totally tell me if these tasted better!)


Copy Cat Kentucky Fried Chicken Biscuit Recipe
Recipe from HERE
  • 2 cups all-purpose flour (you'll need more for kneading, it was a very, very sticky dough)
  • 1 12 teaspoons salt
  • 1 tablespoon sugar
  • 4 teaspoons baking powder
  • 14 teaspoon baking soda
  • 3 tablespoons vegetable shortening
  • 4 teaspoons Butter Flavor Crisco (I used butter)
  • 1 cup buttermilk
  • Whole milk to baste biscuits with
  1. PREHEAT oven to 400°F. 
  2. Combine flour,  salt, sugar,  baking powder and baking soda in a large mixing bowl; Cut in shortenings until mixture resembles coarse crumbs.
  3. Stir in 1 cup buttermilk just until a soft dough forms (dough will be very loose and sticky at this point).
  4. Sprinkle flour over a large wooden board; turn dough onto a floured board and knead gently 10 to 12 times or until no longer sticky, re-flouring board as necessary while kneading.
  5. Gently pat or roll dough into a circle 1/2-inch thick.
  6. Cut out biscuits – pressing straight down – with a 2-inch biscuit cutter.
  7. Reform scraps, working it as little as possible and continue cutting.
  8. Place cut biscuits on an ungreased baking sheet with edges barely touching; brush tops of the biscuits with whole milk.
  9. Bake for 15 minutes, or until golden brown.
  10. Immediately brush biscuits with butter after baking.
  11. Serve hot and enjoy!

A baby cake for my baby's birthday


I had to do a craft show on my baby's first birthday and left my husband in charge of making his cake.  My husband makes the best Texas Sheet Cake and I told him to make that and just put a portion of the batter into one of our little cake molds. 

(Side story:  After we got married, we realized we grew up eating the same cakes for most of the birthdays in our homes.  My mom mostly used sour cream though, while his family used buttermilk, and his family baked theirs in a cookie sheet, while my mom used a 9x13, but same recipe!)

Anyway, I came home to the most perfect little cakes!  He made more than one for me to choose from!  Good job John!!!

Taco Bite Appetizers.


I guess I married my food soul mate...

I made taco salad for dinner the other  night.  I was too busy eating and dealing with the kids when I realized John was working hard at the stove.  He wanted fancy taco bites not a boring taco salad!

I laughed so hard because he was going through all this effort to make his dinner in little bites instead of just mixing it up on a plate.  He even cut up his lettuce super tiny!  I did have to tell him he was putting things out of order!

This is one of our favorite little party appetizers though.

Taco Bite Appetizers

In your tortilla scoop add:

1.  Taco meat (I used turkey) or beans (I would do re fried).  Or both.
2.  Add cheese
3.  At this point you could put them in the oven just until cheese is melted if you were serving them right away, OR just do a bean dip (with the beans) and don't put them in the oven.
4.  After pulling out of oven, add lettuce, sour cream and a tomato on top.
5.  If doing a bean dip - omit lettuce, do guacamole, sour cream and a tomato on top!
6.  Serve cute little yummy cups of deliciousness.

Hmmm...

Have you ever wondered how to make your own Slim Jims? Yeah, I haven't either, but I can tell you how to make your own...

So, on Super Bowl Suday, John wanted little smokies. So, he puts them in the pot, asks me how to make them, I tell him to cook them till they shrink a little, and then left to go to a meeting.

I come home to find that he had over cooked them. "Honey," I said, "shrink, not shriveled..."

But, actually, I gobbled them up all last week; they just tasted like slim jims. I love beef jerky, but only buy it on long road trips, becuase you can't fall asleep while you try and chew beef jerky. Really, you should try it.

Anyhow. We used turkey little smokies, and then use any regular recipe to make them, cook them until they are good and dead (shriveled), and you've got yourself a slim jim.

Buffalo Chicken Dip


I like that my husband can cook. I guess, I don't know any woman that wouldn't like that their husband could cook.

For our Super Bowl gathering, which is really more of a feasting and game playing gathering rather than a watching the Super Bowl gathering... We sure did some feasting, and this morning I'm still not hungry. (Though, I may have indulged in some of this dip for breakfast...)

John usually gets to pick the menu for this party, and he found a recipe online that he wanted to try this year. Except when he made it, he totally made it his own, not even following the recipe. Awww... we're a match made in heaven.

John's Buffalo Chicken Dip

8 oz. softened cream cheese

1 c. blue cheese salad dressing

1 c. ranch salad dressing

1/2 c. Frank's Red Hot Thick Cayenne Pepper Sauce

1 c. shredded Cheddar cheese

2 c. shredded Mozzerella cheese

2 cans (12.5 oz. each) Chunk Chicken Breast in water, drained


Put all ingredients into an electric fondue pot, and heat on low until melted. (John's one tip would be to cream the cream cheese with a mixer to make the melting go faster.) Serve with nacho chips and celery.

It's that easy! AND yummy!
