Turkey Quinoa Meatloaf

 

Here is a healthier alternative to regular meatloaf.  I have experimented a lot using this recipe as a base.  I tried using just ground turkey breast, but it was way too dry.  This meatloaf has a great flavor, but don't expect it to be wet like regular meatloaf, is it definitely a leaner meatloaf.  Enjoy!

Turkey Quinoa Meatloaf Recipe

1/4 c. quinoa (equals about 1 cup cooked)
1 small onion, minced (or 1 T. dried minced onion)
1 large clove garlic minced (or 1/4 tsp. garlic powder)
1 16 - 20 oz. package ground turkey
1 16 oz. package of ground pork
1 T. tomato paste
2 T. barbeque sauce
1 T. hot sauce (I omit this if I'm cooking for people who can't stand heat)
2 T. Worcestershire sauce
1 egg
1 1/2 tsp. salt
1/2 - 1 tsp. ground black pepper

Sauce
Remaining of the 6 oz. can of tomato paste
3 T. brown sugar
1/2 T. hot sauce
1 T. Worcestershire sauce
1 T. barbeque sauce

 
1.  Cook quinoa according to directions.  Set aside and let cool.

2.  You can saute the onion and garlic in a little bit of olive oil, but I'm too lazy to do that most of the time. I either use the powdered or dried, or just put them in uncooked. 

3.  Preheat oven o 350 degrees.

4.  Mix all the meatloaf ingredients together, and put in loaf pan. 

5.  Make **sauce ingredients and pour over meatloaf.

6.  Bake at 350 for 50 minutes or until instant read thermometer inserted in center reads 160 degrees F. 

 
**Because the meatloaf is drier than regular meatloaf I recommend making another sauce to serve with the meatloaf.

1 T. Worcestershire sauce
1 T. bbq sauce
3/4 c. ketchup
