Yummy Baked Potatoes


These were simply delightful.  I didn't take a picture of the prettiest ones though...  They are so pretty!  Great side to have instead of a regular baked potato!

6 Medium Size Potatoes
2 - 3 Cloves Garlic, thinly sliced 
2 Tbsp Olive Oil
2 Tbsp Butter
Sea Salt
Freshly Ground Black Pepper


Preheat the oven to 425˚ Put the potato on a chopping board, flat side down. (A tip from the blogger who posted this recipe:  Put the potato on the spoon part of a wooden spoon to cut your potato to help you not cut through the potato.)  Start from one end of the potato, cut almost all the way through, at about 3 to 4 mm intervals.

Arrange the potatoes in a baking tray and insert the garlic in between the slits. (I used garlic powder, I had planned on mincing my garlic and mixing it with the butter, but got lazy.  That's what I'll do next time.)  Use a pastry brush and brush some butter on top of each potato. Then drizzle the olive oil and sprinkle some sea salt and freshly ground black pepper.

Bake the potatoes for about 40 minutes or until the potatoes turn crispy and the flesh is soft
